Monday Blues

Today has not been going very well. But I will not complain about it. I will move on and try to make the rest of my day more positive!
I have been trying to brew up some ideas in my head to start an Etsy shop. I always think of random things I would like to make, but my classes do get in the way.
I am hoping that Spring will inspire me to just start creating with my hands, instead of leaving the ideas in my head!.. at least it's MARCH already!

It's also officially my mothers Birthday, HAPPY BIRTHDAY TO MY BEAUTIFUL MOTHER! <3

I have the recipe for the Spinach Artichoke Pizza.
I absolutely LOVE spinach and artichoke ANYTHING, so this was pretty amazing.
This recipe is easy, as usual, and takes some short cuts so you don't have to make the dough and sauce, unless you would like to! I did not bring my camera to my mother's house, so I couldn't take my own picture. If this picture doesn't make you hungry, then I don't know what will!

SPINACH ARTICHOKE PIZZA
1 ball of pizza dough, or pre-made crust, OR whatever your heart desires for crust. You could use FRENCH BREAD, Pita bread, English muffins - GET CREATIVE!
1/4 cup of white sauce (I use a pre-made Alfredo sauce that I kick up with some spices. You can also use red sauce if you prefer)
1 cup of Mozzarella cheese
1 jar of artichoke hearts (I use marinated ones for added flavor)
1 cup of spinach leaves 
*optional* I also sometimes like to use Ricotta cheese, it compliments the flavors well!
olive oil
flour
any spices you want to flavor the crusts


Preheat oven to 400 degrees F.
I build my pizza on a pizza stone.. if you do not have one, PLEASE INVEST IN ONE they are wonderful in more than one way!


If using a ball of pizza dough, roll it out and stretch it out with a few pinches of flour so it wont stick.
Drizzle a little olive oil on the crust and massage it into the dough.
Next I season the dough with Italian seasonings, salt, pepper, red pepper flakes, and garlic powder.
With a spoon, add the alfredo sauce, spread it around until it covers the dough.
If using Ricotta, dollop it around the pizza, use desired amount.
Sprinkle Mozzarella cheese, leave a little to sprinkle on at the end.
Next roughly chop the artichoke hearts, and place them around the pizza
Roughly Chop the spinach and place all around the pizza! 
Sprinkle remaining cheese on pizza and I throw on a few more spices!
Place in oven for about 15 minutes, or until the crust is nice and golden and the cheese is bubbling!

I know I have had a lot of pizza in one week, but I love pizza! I mean who doesn't? I could have it a million different ways!
