Waffles!

March 9, 2010
Today I had an early dinner, and it was breakfast!
I actually didn't make it either.. my boyfriend did! :)
Yesterday was national women's appreciation day, but why not spread it out for a few days.

Sometimes, I don't like breakfast for dinner. I don't know why but something about it totally turns me off. But I haven't had it in a long time, so I was a little excited for it.
Once I learned there was waffles in the mix, I was pumped! I do love them, with a little butter and warm maple syrup!

Here is a delicious waffle recipe:

LaLa's Waffles

2 eggs
1¾ cups milk (or buttermilk if you choose)
1 stick butter, melted and cooled to room temperature
1¾ cups all-purpose flour
2 TBS light brown sugar
1 TBS cinnamon
1 TBS Vanilla
2 tsp baking powder
1 tsp baking soda
1 tsp salt
Nonstick cooking spray or butter.

In a large bowl, whisk eggs, milk and butter.
In a separate bowl stir dry ingredients then add the egg mixture and whisk until smooth
Heat waffle iron and butter lightly or spray with a nonstick spray. Ladle batter onto iron about ¼ cup for about 8 waffles. Close the iron and cook until light golden brown.
Serve with butter, syrup, berries that have been reduced in sugar, whipped cream, nuts, or whatever else you desire!

Enjoy!

Spring is coming, I love this warmer weather! NO MORE SNOW PLEASE!
