I absolutely love fresh mozzarella AND I absolutely love basil. and I love tomatoes when they taste sweet.. and not like dirt. This may seem strange, but sometimes I think they taste horrible and like dirt!!
On a better note, I love Tomato, Basil and Mozzarella salad with vinaigrette dressing. I think I could eat this every single day of my life, and NEVER get sick of it! I have fresh basil that I am growing and boy does it taste and smell amazingggg.
I will share a recipe, it's fool proof, simple, and really easy!
Tomato, Basil, & Mozzarella Salad
(to serve 3 or 4 people)
1 package of fresh mozzarella balls, or get a giant ball and cut it into bite sized pieces
1 package of grape or cherry tomatos or cut up a big one
1 small bunch of basil - roll leaves into a bunch and thinly slice
1/4 cup of balsamic vinaigrette dressing
In a bowl combine mozarella, tomatos, basil and dressing!
I like to chill mine in the fridge, but you can eat it straight away.
ENJOY!
