Roasted Shrimp Cocktail

HAPPY 2010! New years means new beginnings, and honestly I have not really sat down and thought of any resolutions, but I know there are some brewing in the back of my mind, maybe I am just avoiding them until I feel it's right...

ANYWAYS, I have adapted a recipe from Ina Garden, whom I love by the way.



The recipe calls for roasting shrimp instead of boiling it to cook it for shrimp cocktail. I was very interested in the idea and decided to try it. It is a VERY simple recipe and it comes out fabulous. Because I mean c'mon, boiling shrimp to cook it really doesn't sound that appealing when I think about it! :)





ROASTED SHRIMP COCKTAIL


I bought a bag of uncooked shrimp that were already deveined. I happened to pick up Emeril's brand.
Olive Oil
Salt 
Pepper
(I used Cajun seasoning on some of them too, so any way to kick up the shrimp how you like would be great!)


Preheat the oven to 400 degrees
The uncooked shrimp I had needed to be peeled, so make sure you do that before cooking, leaving the tails on.
Line a baking sheet with tinfoil and drizzle the Olive Oil over it.
In a bowl season the shrimp. (I honestly liked it with just salt and pepper the best)
Lay out the shrimp on the baking sheet 
Cook for 8 - 12 minutes.
Let cool in the fridge.
Serve with favorite cocktail sauce!


If I ever make my own shrimp cocktail I will never boil it again! Something about roasting food in the oven just brings out the flavor so much more, not in just shrimp but in a lot of things I have cooked.
Now on to those new year resolutions.....
