Chicken Marsala

So I am back and ready to start blogging again! 
I cannot BELIEVE that it is August already! For some reason it feels like it's going to be a good month. I feel like from here out out I am going to be unstoppable and things can only look up :)

I have also decided that Monday's are good days to share a recipe each week. Don't get me wrong, when I'm on a kick I may post several a week, but since I have slowed down on the cooking, Monday shall be recipe day.

For todays recipe.. I will share my version of Chicken Marsala (sorry veggie lovers! I'll have one for you soon!).  Typically I am not a huge mushroom fan,  but in this dish you will not want to leave them out! Finely chop them if they bother you! The flavor they bring to this dish and in many others is spot on!

Chicken Marsala
1 lb of chicken breast
1/4 lb of sliced prosciutto
1 1/2 TBS butter
1 TBS Olive oil
1 onion - chopped
1 package of mushrooms.. the white ones will work.. or whatever you like! & dice them up
1/2 cup of Marsala wine
1/4 cup of whipping cream
3/4 tsp of sage - I use the dried sage
1/4 tsp of salt
1 cup shredded parmesan cheese
Garnish with parsley or scallions!

Preheat oven to 425 degrees.
On stove, heat a skillet to medium heat.
Melt butter and oil in pan
Cut chicken and half of the prosciutto into strips or chunks
Add meat to pan, and cook for about 8 minutes, or until chicken is no longer raw.
Transfer the meat into a bowl.
In same skillet, add chopped onions and mushrooms.
Cook for a few minutes and add meat.
Mix together and cook for a few more minutes, now add the cream, sage and salt.
Simmer this for 10 minutes.
In a casserole dish, add the mixture and top with parmesan cheese.
Bake for 10 minutes or until it bubbles and the cheese is starts to brown.
