GLUTEN FREE!

Christmas is coming and so is the SNOW!!! We are suppose to get 6 - 12 inches. My fingers are crossed for a snow day!


I got some recent requests for some gluten free recipes, so I am going to post a few!
There is also a restaurant/store in manchester that specializes in Gluten Free foods.

These recipes are all Gluten free:
Thai lettuce wraps with Spicy Sweet and Sour Sauce

3 ounces of thick rice noodles (rice vermicelli)
4 ounces large raw shrimp (peeled & deveined)
1 medium cucumber, peeled, seeded and cut into matchstick pieces
1/2 cup of fresh cilantro leaves (I use parsley for a substitute, because I dislike cilantro)
1/2 cut fresh mint leaves
1 large bunch green leaf lettuce or boston lettuce

Soak noodles in hot water for 10 mins. to soften. Rinse under cold running waer to cool & drain.
Boil shrimp (you can buy them already cooked to skip this step) Otherwise cook 3 - 5 minutes untim pink.
Cut the shrimp lengthwise in half.
Arrange shrimp, noodles, cucumber cilantro, and mint in the center of lettuce leaves and roll up.

Spicy Sweet and Sour Sauce

1 green onion (otherwise called a scallion)
2 TBS rice vinegar
1 TBS cornstarch
3/4 cup water
1/4 cup brown sugar
1/2 tsp red pepper flakes

Mince green onion, reserve some green parts for garnish.
Combine with vinegar and cornstarch in small bowl. Mix well.
Combine water, brown sugar, pepper and minced green onion in small saucepan, bring to boil.
Stir in cornstarch mix. Return to boil. Cook 1 minute until sauce thickens.
Serve and dip your Thai lettuce wraps!


Beef Enchiladas

6 ounces of lean ground beef
1tsp minced garlic
1/4 cup green onions - sliced
1 cup mexican cheese
3/4 cup chopped tomatos
1/2 cup corn
1/2 cup black beans
1/3 cup cooked white or brown rice
1/4 cup salsa
6 (6inch) corn tortillas
1/2 cup enchilada sauce (McCormick makes a gluten free sauce I believe)
1/2 cup sliced romain lettuce

Preheat oven to 375 F, brown ground meat, drain and discard fat, add green onions and garlic. Cook about 2 minutes
Combine meat mix with 3/4 cup cheese, 1/2 cup tomato, corn, beans, rice and salsa. Mix well and spoon down center of tortillas. Roll up.
In casserole dish place enchiladas seam side down. Spoon Enchilada sauce on top. Cover and bake for 15 minutes.
Remove from oven and sprinkle with remaining 1/4 cup cheese, then bake for an additional 10 minutes. Serve with remaining lettuce, tomatos, salsa and sour cream.

Thanks lala, I've made the wraps before and Laura loved them. Without the cucumber though.
