Laura's Percfect Banana Bread

When it comes to baking and myself, it's either a hit or miss. Baking consists of measurments and being very exact with some ingrediants, and my brain does not work like that. That is why cooking is better for me,  because you can improvise with flavors; throw more pepper here, add more garlic there, etc.

When it comes to BANANA BREAD, I finally have the perfect recipe, for me atleast.
I know this may sound silly, but I have attempted to make a good banana bread for sometime now, and they are usually a flop. AND usually my parents are the guinea pigs (boy am I sorry for them) They do it with love, I am assuming, or they are just really hungry.
The past times I have made banana bread, it didnt cook in the middle, no matter how long you left it in the oven, the consistancy was wrong, or the flavor was just not there.

So here I have you Laura's Perfect Banana Bread. I know there are many recipes out there for banana bread, and my way might not be perfect for you, but if you are looking for a quick and delicious recipe this is it! All the flavor is there, with basic ingrediants, and there is room for improv!

Laura's Perfect Banana Bread
(makes two loaves, cut the recipe in half for just one)
3cups flour
2 cups sugar
1 TBS Baking soda
1 TBS cinnamon
1/2 cup of oil (I used vegetable oil, feel free to use canola, coconut, but not olive oil!)
4 ripe bananas
2 eggs beaten
1TBS vanilla


Preheat oven to 325 (As I have stated my oven is really crummy, especially when it comes to baking, so I have to bake this at 175 degrees believe it or not! for one hour, but I checked it with a tooth pick probably about every 10 minutes because I was scared it would burn!) So I am assuming bake around 325 until tooth pick comes out clean or about 1 hour.

Mix all dry ingrediants in seperate bowl.
Mix wet ingrediants in another bowl.
Add Bananas to wet mix and mush them up, I used a potatoe masher.
Add Wet mix to dry mix until thoroughly mixed together

In two well greased bread pan (I used butter) evenly distribute the batter.
Place in oven until tooth pick is clean.


OPTIONAL ADD INS:
Chocolate chips
Walnuts
Pecans
Pineapple with a coconut glaze (I'd cook with coconut oil)
**TIP before putting any of these in the batter, lightly toss with flour, this will allow the chips or nuts to stay suspended in the bread, and they wont sink to the bottom!
I am over joyed with this banana bread and how it came out. I know it does seem silly, but I finally have a solid recipe for BAKING something delicious!

I love banana bread and may have to try out this recipe. I've never used cinnamon in it before. I always just throw in chocolate chips. ;)
